The Edgeware Gourmet Compact Electric or Manual Knife Sharpener features electric and manual sharpening in one compact unit. The electric sharpening slots feature a synthetic abrasive sharpening wheel with blade guides to automatically hold your knife at the correct sharpening angle. After sharpening with the electric sharpening wheel, Edgeware's recommend s using the ceramic rods for final edge honing. Crossed ceramic rods create a pre-set sharpening angle that lightly hones both sides of your blade at the same time putting a polished, razor-shape edge on your knife. The crossed ceramic rods can also be used for a quick touch-up on an already sharp knife. This unit will sharpen household knives of alloy, carbon or stainless steel.
